and were at a loss for recipes. I found this one on epicurious and
adapted it. It is pretty yummy! We had it with brown rice and pea
shoots.
Marinade
1/4 cup fresh lime juice
1/4 cup olive oil
1/4 cup dry Sherry
1/4 cup chopped fresh cilantro
3 tablespoons soy sauce
3 tablespoons honey
2 garlic cloves, pressed
1 tablespoons Dijon mustard
1 tablespoons grated fresh ginger
1/2 teaspoon dried crushed red pepper
Place fish in medium glass bowl and toss to coat. Chill at least 30
minutes and up to 1 hour, stirring occasionally. Reserve remaining
marinade for basting and making sauce.
Spray grill rack with nonstick spray. Grill fish until slightly cooked
as desired, turning occasionally and basting with remaining marinade,
about 8 minutes.
Bring remaining marinade in saucepan to boil. Reduce heat to
medium-low. Whisk in a knob of butter (do not boil). Season sauce to
taste with pepper. Serve sauce with fish.
