Carrot cake - the best in the world

Katie wanted to make some Carrot Cake and it just happens I have the best recipe for carrot cake in existance. It was the carrot cake my mum maked and used to make for us when we were little.

Of course hearing all about her making it made me insane with jealousy, so I had to make it myself the next day.
